Put on pit. When you finish cooking it low and slow, the meat will fall apart and be wonderfully tasty with all that salsa on it.

Take the cleaned and trimmed strap, and slit it all the way down one side but not all the way through. In a bowl, mix a small package of Jimmy Dean sausage, some chopped onion and jalapeno and a handful of monterey jack cheese. Stuff the strap with that mixture, and pinch it closed while you wrap the whole thing in bacon. Cook low and slow on the grill. Matter of fact, I have a couple pairs of straps in the refrig from just yesterday...this might make a fine Valentines dinner!
