How bout some Wild Pork Enchiladas ;D

left over smoked pork - boiled till falling apart
Velvetta and/or left over cheese that needs to be eaten
red sauce or green enchilada sauce
I also cut up some fresh serranos from a friends garden and garnished the green sauce

Add everything in a bowl and micowave for 1 minute

Pack and roll tortillas

pour 1/4 can of saved enchilada sauce over rolled enchiladas
Lots of cheese

350 till it starts bubbling around the edges

Gauranteed to keep you safe for an 8:30am meeting even after copenhagen and coffee ;)

That looks pretty good!  Gotta watch those serranos though, they will leave an exit wound if you are not careful  8)
