I was thinking two 10x40's back to back with the high point in the middle with a one inch drop to the front of both sides.

Unless you plan to somehow hose them from the back to the front, wouldn't you want your slope going the other way?  Otherwise your washing against the slope, and that won't work very well.  Having kennels back to back on concrete won't be the easiest to clean.
