"But if you do not have the permit it does not matter if you have the pistol concealed or not the charge is the same."  That's actually wrong.  If you are not a convicted felon, you can carry a concealed handgun inside of your vehicle whether you have a permit or not.  Also the idea that a police officer arrests you for the knife just to look for something else could only be true when it comes to searching a person, not a vehicle.....the laws changed a few years back when it comes to searching vehicles incident to arrest.

Your kitchen knife is illegal to carry. The key to it is carry. If it is on your dash you are not carrying it. A guy I knew was arrested for it but the judge threw it out and fussed at the cop. You just need a reason to carry it. They don't want everyone walking around with large knifes. My dad's old lawyer was an ex-cop and said "you might beat the wrap but you ain't gonna beat the ride. So when they say you are under arrest stop talking and ask for a lawyer. Because what you say can only be used against you after that." If a cop says you are going to jail for a hog knife he is just plain harrasing you. Most likely just wants to look for something else illegal and arresting you gives them a chance to search everything. Know you T-Bob that is why you never knew that because you are a good guy and it is plain to see. But you shady looking guys better hide your knife. There is no concealed weapon law in Texas. It is either a legal weapon or it is illegal. If you have a concealed handgun permit you know where you stand. But if you do not have the permit it does not matter if you have the pistol concealed or not the charge is the same. If you are a straight up guy or gal you have little to worry about even if some cop harrases you.
