You use a circular motion. I still use the stones if I need to sharpen near the tip but that is not very often. I saw skinners using them. I pulled out my old knife that needed sharpening and in thirty seconds they did what would have taken a few minutes plus you can't mess up. When you are skinning just have two knives and someone to clean and sharpen them as you hand it to them.
