250 is really too big unless ya got plenty of help, we try to do ours under 100 and it may take 1 cutter and 2 holders for one around 100lbs
A cousin of ours does big wild boars by himself.

We could never figure it out. Finally he told us how he was doing it.
He would leave the hog in the pen and catch a back leg with a rope and then drag him to the side of the pen and pull both back legs through the hog panel and tie the hog off and have a sharp knife ready.
