The reason I'd say two man teams is to really really really put the dogs (and the men) to the test. It shouldn't be about some team who's got 40 dogs available to span the two days. Heck as long as I'm just dreaming it up, I may as well throw it out there and say each team member is limited to his four best dogs plus one catch dog each. That way your talking a total of 10 dogs per team for the whole weekend.
I've had and heard people say "oh yeah!! Well bring your best dogs and put your money where your mouth is!!!" and well this would be a friendly cordial way of folks all over Texas doing just that.
