I would suggest charging him by the head or by estimated weight. Let him set the price per head and no charge for anything under say 50 lbs. Also, show him every hog and let him estimate to weight that way you are always right. I think a fair price would be between 5 and 10 cents a pound.
If you dont catch a hog than no charge either way.
I learned a long time ago that no good deed goes unpunished. Everytime I try to do something for someone else, I end of losing. I would have no problem charging him if that is what he wants. He will probably use the expense as a write off anyway.
