i like cooking on a tri pod , cause you can adjust the height and change the bottom heat in a instant if need be.

 if your setting oven over coals you will have very few on the bottom maybe 7 or 8 coals and about 15 or 20 on top

 i probably check my food to often but i like to see whats happening..

 stay with it , it will come to you.
