Ive been wanting to do this for quite some time now, didnt know how to do it and probably still dont...lol I done a little research and came up with what I thought would be a good recipe for that big sow Trent and I caught the other night. My buddy Scott Pialle, my son Caleb and my wife helped. We had a few test fry's and after I was satisfied I did a final grind and the wife and I packaged it all up this morning and in the final pic you will see the results. It was alot of work and sometimes I wondered if it was all worth it. Seeing it in the freezer I can say now it was worth it after all.... Cheesy

You will find that the only mistake you made was not making enough. I made about 500 pounds already this year and I doubt it lasts us long. I give a little way to friends though. That's all I have eaten this past week. I put up alot of pan sausage but I also smoked quite a bit. I love it!

Yes she did Bobby,It really taste great too.  Laurie is gittin wound up about her hunt! How far are you from San Antonio? we are thinking about staying there for a couple of nights when we come down

raider i couldnt help but give you some advise... with all that sausage it would be ashame not to make sausage balls... we do this every christmas and man are they good....

   Sausage-cheese Snacks
 
2 c. Pioneer mix or bisquick
1 lb. grated cheese
1 lb. Owens sausage
 
Preheat over 325.  Lightly grease baking sheet "we dont grease the sheet cause the sausage does a good job of that".  Mix all ingredients in large bowl.  Shape into 1 1/2 inch balls.  Place on baking sheet.  Bake 25 - 30 min.  Drain, serve hot.
 
Variations:  1/4 c. onion, 1/2 c. parmesan cheese or 1 T. chili powder.
 
Balls can be frozen & cooked later.  Baking frozen or thawed does not affect baking directions.  Yields 56
