Man...your gonna get your opinions for sure but its a personal preference.
It seems like your asking about how many to "have" as in keep in your yard. That is definitely determined by how many dogs you can support - total, strike/bay included. I like to keep 6-8 hunting dogs plus a couple of CD's. I try to keep my number of adult dogs around ten. I can get away with 2 catch dogs because I hardly ever hunt alone, so, if I get one cut down I'm still ok.
How many to take with you on a hunt? For me...2 is a good number.

I like using 2. But i only hav 1. When i hunt with friends they usually bring one to. Sometimes i hunt with 2 bay dogs and a 30-30. Works good for me. And some people hunt with just rough bay dogs dont need a catch dog cus they all catch. Just depends on how you hunt, and how many dogs you want to feed

In the yard depends on how often you hunt. I like to change them out when hunting all the time. But if you are only hunting once a week or less then one or two is fine. I hunt with two and use one. The other is a back up just in case I find a beast and need help. But then I can also use one and the switch after a catch to keep them working. I don't want more than three on the ground. I also only use a couple bay dogs. I don't want too many dogs getting in the way when I go in to grab the hog. It is really up to you how you want to hunt, and the hogs you have to catch.
