Well, before I walked, I probably crawled. It's likely I also fell on my butt a few times.

I had my first experience with the oven tonight. Started out with my coals in the charcoal starter chimney. I must have let it burn too long because my kingsford matchlight charcoal turned to kingsford match lit dust. Round two was in order and since I had already bothered craig for the day, I decided to bug slimpickens. He got me lined out on starting the coals and getting the oven preheated.

Decided on a simple cobbler, and I needed the mood right. I had already brought my horse up after I worked him. I thought the horse and a small campfire would create good atmosphere. The coals were started well, so I preheated the oven. Got the ingredients arranged and set the coals on the lid with a few underneath. I'm guessing that the hog pan I was cooking in held a little too much heat in because I accidently scortched the bottom of the cobbler. The rest of the cobbler was pretty brown too. I put the horse up, fed the critters, and gave up for tonight. No worries, I will try again tomorrow and be more diligent about regulating the heat.

The night wasn't a total waste - Tater ate the cobbler and didn't even complain!

Matt, I figure if he survived a fridge cleaning on Sunday and burger king for lunch today he must have an iron gut. Surely a little overcooked cowboy cobbler won't do him in....

Hey, I did make a batch of craig's camp potatoes but I made them on the stove. Bagged them and put them in the fridge so I can make huevos con papas in the morning. Cooked in a cast iron skillet I'm pretty sure for the first time ever. I don't even know where the skillet came from. Chris showed me how to clean it by boiling it on the stove, and then I rinsed and warmed it again before spraying with olive oil. The potatoes turned out great. I'm gonna get this stuff mastered one day.

mandi. I want my cobler to simmer for 15 minutes and then I will take it off the bottom heat, Finish it with only the top heat. Check it often and turn the lid a quarter turn each time.

Okay, that makes sense. I bought a bunch of cans of biscuits last week because cody mentioned learning to regulate heat with those cheap biscuits. Gonna take his advice so I don't get chris all excited about a good desert only to have me mess it up. Do you do the same thing for those biscuits by removing the bottom heat so you don't scortch?

You'll just have to check them and see for yourself until you figure it out.
Once the biscuits start rising, take a fork and pry one up and check the bottoms, that'll tell you if you need to set it off of the fire.
Be quick, as every second the lid is off is a second your loosing cooking heat. Wink

Sorry about the cobbler, goes back to a lot more heat on top......you'll get it figured out and once you do you'll wonder why you ate it any other way. Grin

i like cooking on a tri pod , cause you can adjust the height and change the bottom heat in a instant if need be.

 if your setting oven over coals you will have very few on the bottom maybe 7 or 8 coals and about 15 or 20 on top

 i probably check my food to often but i like to see whats happening..

 stay with it , it will come to you.
