Anybody eat Racoon? What's the Best way to prepare it and cook it?

we used to take it and boil it and then tear the meat off then crock pot it with potatoes and carrots and celery and a hogie bun with some sauteed onions on top  Wink

A friend of mine smokes them. He has a certain way he cleans them, then he just smokes them like you would a pig.

My favorite recipe is to take a coon and a good beef brisket, wrap the coon in foil, throw it in the trash and cook the bisket on the smoker...

Seriously though, I've had it smoked and it was decent.

I think they can be good. On the old deer lease, if a boy would shoot a coon we'd make them eat at least a thigh. Put the whole coon on aluminum foil, butter onion garlic salt and pepper then diced jalapeños, tie the coon up with bacon and wrap the foil. BBQ pit for an hour.

That sounds good but wish I knew someone that tried it did you eat any of it thAt was cooked

I ate plenty of it. Not bad camp food, just wouldn't be eating it around the house.

There was a carwash in the quarters on the north side of Houston recently that got busted for illegal gambling, marijuana and selling coon meat.

Okay i talked to an old timer and he said that he will only eat them in the middle of winter. With that said, he told me to boil them first and add cayene, blk pepper and salt to the water and boil it till tender. Next if there is alot of excess fat trim that off. Now bbq it or put it in the oven and cook it with ketchup and wochester mixed together.

Yes boil the coon whole as far as how long bout till it gets pretty tender but not so tender the meat falls off the bone.  Then smoke it more or less bout 300-350 and it will finish it out. Just remember its pretty greasy so U can cook it till it drys out but not crunchy lol Grin. Youll just have to play with it hope it helps

x2 on smokin it, i smoke the heck out of it to the point where it looks like jerky and its still soft and real good, not chewy at all
