Anybody got any good SIMPLE turtle recipe's? I caught this guy tonight in the river behind the house, that's my step daughter holding it, if it wasn't for her I would have never got him on the bank, I was using 8 pound line, I had to call her on the phone to run down there with a net. I like turtle but don't really know how to cook it .

lop the head off, bust the shell where the sides connect the top and bottom halves. clean out the guts and wind pips, skin the legs, tail and neck hide off, then fillet the top shell from the tissue, soak in some cold water a day or so with a lil salt and garlic. bring your water to a boil, add in ur onions, maters, taters, if u like okra, throw some of them in there too, some more minced garlic, more salt and add pepper. after bout 15-20 min of boiling ur veggies, throw in the meat and bring water to a low roll/boil for another 1-1.5 hrs. once the meat has fallen away from the bone, cut the fire, let it simmer down to where its safe to eat from the heat.

if you don't like or want half shell stew, do all the above, but instead of just skinning it out, debone if u want to, or you can leave bone in and nugget the meat up, roll in a slat and pepper flour mix, add in a lil cajun seasoning to the flour and do a shake and bake as if it were fish. or you can do the prep for a stew, but instead of boiling it, you can throw in some rice with the stew veggies and seasoning, put it n the oven covered up good so you get a good steam on the rice and veggies, and cook it for 1.5-2hrs in the oven. all three cooking methods work good for beaver, coon, possum and nutria rat. just watch the possum, you may have to drain some of the fat off before putting the left overs up, or skin the fat off the top before reheating.

hope that helps or gets you pointed in the right direction, and don't be scared to add or take away the veggies and seasoning. happy eating, and if you got any left over, let me know, ill give u my address here in oregon and ill pay for shipping. gotta let these aussies and new zelander flt instructors try some american southern bayou cooking.

Don't know what the law is where your at but here in Florida alligator snapping turtles are protected.They'll throw you under the jail for harvesting one.

That being said I like my turtle fried.....

Best one I know clean and dice the meat get a large pot one large onion dice. 3 clove garlic dice. Three hands full of cilantro fresh dice. One large jalapeño dice. Two table spoons of papkarica or how ever it's spelled. A big helping of Cajun spice mix in a big fry pan stir fry all in pan till done be sure to use olive oil to fry . Cut any vegetables you like put in pot with two quarts of chicken broth add fry mix in cook till vegetables done add salt and pepper to taste enjoy. If you like a gumbo style just add a roue

What are odds of that, I live 20 yards up the hill from this river, the damn turtle escaped, the next night I was fishing and catch the same turtle in the same spot !  I can tell from some scars on its shell. How lucky can a man get? Maybe I should buy a lottery ticket. Charles you ready for some meat ?

What are odds of that, I live 20 yards up the hill from this river, the damn turtle escaped, the next night I was fishing and catch the same turtle in the same spot !  I can tell from some scars on its shell. How lucky can a man get? Maybe I should buy a lottery ticket. Charles you ready for some meat ?

id go out and get a ticket too with that kind of luck. i was just funning you about sending me the left overs. these english rejects ( great down to earth people though) are wanting to do a pig roast, at some point soon, so I'm gonna take notes on how the do it in new zealand. the 4 that i talk to often are fellow doggers too. gonna try and get a couple down to texas for a run, may even rent a chopper and each of take turns popping a couple, since 98% of the instructors and mechanics who are from down under are pilots themselves.
i had a stage check yesterday, passed it, and during it, i wasn't yanking and banking hard enough on the controls, so the chief instructor got on the controls with me, and showed me how he wanted me to make that lil heli squeal. again, for a english reject, they are some cool folks.

yall be careful up there,  don't let testosterone push beyond the limits of the chopper, haha, I've seen it many time, (not with a helicopter though)

I think so ! Got him purging in some water now. I think purging is the right word, where you change the water for a few days and let him clean his self out.

Im sure he is exp enough in that specific model that he knew the limits of what he was doing. I get to the school today thinking we r going for more dual training, but get told to make sure i got my medical and logbook bc i doing my first off airport solo. I was a lil hesitant at first, but when i got it airborne n didnt crash on pick up, i was good. So i bugger to the other airport, i come in to a hover, pushed replay in my head, watched him do what he did, scanned the gauges and rmps were he was and attempted to duplicate what he did. Boy that thing can respond fast with only 1 person in it. It banked steeper and turned on a dime. I attempted a return to target run, and did it, but it was UGGGLY!!!!, but it wasnt to bad for my first doing 1 and only gt 20hrs in the heli.
