This is one of the ways I enjoy eating pork. We shot it up and cooked in our Coonass microwave.

The Cubans use something similar, Chinese Box. Same concept. Thin square, steel or aluminum pit. Coals on bottom and coals on top. Comes out good. Cross hatch skin for some good cracklins.

Looks pretty darn good!! I’m hoping to cook another one in mine soon. Sometimes I’ll take a s lay cabbage on top of hog to keep hog from getting scorched. Next one I cook we’re gonna boil first and get hair off and leave skin on and see how it turns out.

Looks interesting and tasty.
How long does it take to cook this way ?
By the pictures you only put heat to the top, is that right ?
Would it be possible to cook veggies as well ?
I'll look into making one up and trying it.

I believe it took 4-4.5 hours on this one.  Yes sir the fire is on top. I am sure you could put veggies in there and cook them as well!
