BROOK TROUT IN BEER BATTER
 
4 FRESH BROOK TROUT (10-12 oz)                                      JUICE OF 1 LEMON
OIL FOR DEEP FRYING (375 F)                 1CUP FLOUR w/ 1 TEASPOON SALT
 
BEER     BATTER
 
1 CAN LIGHT DOMESTIC BEER                                      1 TABLESPOON SALT
1 CUP ALL PURPOSE FLOUR                                   1 TABLESPOON PAPRIKA
 
POUR BEER INTO A BOWL. SIFT FLOUR, SALT AND PAPRIKA INTO BEER.
STIR UNTIL BATTER IS CREAMY. SPRINKLE CLEANED TROUT WITH LEMON JUICE. DREDGE TROUT IN FLOUR FIRST SO THE BATTER WILL CLING TO THE FISH. DIP TROUT IN BEER BATTER. FRY IN OIL AT 375 F FOR 6 TO 8 MINUTES, OR UNTIL BROWN.
