1 CUP CHOPPED HAM                                                ½ CUP CELERY, CHOPPED
1 ½ TABLESPOONS FLOUR                  ½ TABLESPOON PARSLEY, CHOPPED
2 TABLESPOONS BUTTER                                                          1 WHOLE CLOVE
1 TEASPOON PAPRIKA                                                          ¼ TEASPOON MACE
1 TEASPOON SALT                             1 (10 ½ oz.) CAN CHICKEN CONSOMME
½ TEASPOON PEPPER                                         1 (8 oz.) CAN TOMATO SAUCE
                                                      2 TABLESPOONS SWEET GREEN PEPPER, CHOPPED
 
ADD FLOUR TO MELTED BUTTER AND STIR UNTIL SMOOTH. ADD PAPRIKA, SALT, PEPPER, GREEN PEPPERS, ONIONS, CELERY, PARSLEY, CLOVE, MACE AND CONSOMME. SIMMER 30 MINUTES, STIRRING OCCASIONALLY. ADD A LITTLE WATER IF NEEDED. STIR IN DUCK, HAM AND TOMATO SAUCE AND HEAT. POUR OVER HOT BUTTERED RICE. SERVES 6.
