well why would you want to pass up on a cat ?  the dogs I bred were 1/2 walker 1/2 cat and I got just what you are describing that you want . good nose plenty of grit and leg .

 others have gotten what you are wanting with 1/2 walker and 1/2 yaller dog . I don't see the ridgeback giving you any different , except you'll loose any herding ability  that the cur dogs bring to the table .
