It will probly be easier than a young dog. It should figure out what is expected faster and u don't have to worry about it being a goofy pup. The closest I have come to doing what ur doing is starting a lab duck hunting at 5 years old. He had played a lil fetch but never hunted. He picked it up fast and was a fine dog to have never really been trained. Picked up hand signals figured out how to trail cripples and was a pure joy to hunt with.
