i understand you want a dogo...
but.... for what you are wanting a dog for i would go with a german shorthair pointer or a draather.
they have both bird dog instinct and prey drive on game, plus they are loyal to and bond well with a handler and family.
second choice is split between these two.
if you were going have one on fur more often than birds, a mountain cur may be the ticket, get a well bred pup and start it early on birds, they are intelligent enough to be dual purpose if prepared correctly.
also, don't count out an airedale, the hunting bred airedales have been used for fur, birds, and home protection since their infancy as a breed.
all three are loyal, intelligent breeds that have a well documented history of being excellent multi taskers and farm and ranch all rounders.
