I have used several different types of hobbles and from my experience I found the Snap Hobbles from Ugly Dog Ranch to be my preference.  With these you can hobble each leg individually, making it much easier for one man, and then simply attach each hobble to a center ring.

But I agree that tying a hog is more secure than hobbles.  I only recently learned how to tie a hog properly, and I can probably tie a hog in half the time it would take me to hobble it.  Start with a 6 or 7 foot piece of rope with knots in the tips.  The only knot you need to know is the double half hitch(DHH).   Tie a DHH on left back leg, run your tag end over to the right back leg.  Tie a DHH on right back leg, run your tag end to the right front leg.  Tie a DHH on right front leg, run your tag end over the section of rope connecting the back legs and now pull the tag end under the rope connecting the back legs and up to the left front leg(this should pull the legs together).  Tie a DHH on left front leg.  Done.  I only started with the left for an example .
